Pintxos belong with Txakoli (pronounced "cha-ko-lee"), the local white wine. Light, sparkling, and with subtle acidity, it reigns in every bar. Waiters pour it spectacularly from great height into the glass to activate the fine bubbles.

The best Txakolis come from DO Getariako Txakolina, just 25 km west of San Sebastian. Wineries like **Txomin Etxaniz** offer tastings overlooking vineyards that slope steeply toward the sea.

For an authentic experience, order a "zurrito" - a small glass of beer - or a "txikito" - a glass of red wine from Rioja. In the Basque Country, drinking is a social ritual, not an end in itself.
